The original book was divided into three sections: grains, processing methods, and characteristics of cereal components. Topics originally treated in the third section have been merged with the other two, 80 the present edition contains nine chapters on grains and twelve chapters on the technology of various processing methods applied to grains. It was not thought necessary to physically divide the new edition into two sections, the grains chapters and the processing technology chapters follow each other in a single sequence.
